Morning Y’all!
Somehow, after thinking about daylight savings time all week I managed to nearly forget about it until around 7.00pm last night, whereupon I immediately switched into anxiety mode & was like … ARGHHHHHH & starting saying “ugh it’s REALLY so much later…” you know the drill, LOL.
This morning I’m meal prepping with a purpose, I’d like to have everything done & organized around the home front before noon so that the farmer & I can enjoy the day, knowing it will be over quick & back to “evil” Monday morning again. I’m keeping things simple again this week so I can focus on what really matters, coffee, Rupert & snuggles with The Farmer … typically in that order 😉
Here’s what I’m making this morning to make life a bit easier during the work week –

One dozen hard boiled eggs

One tray of Roasted Root Veggies
-
One day worth of Chia Pudding
-
One day worth of Overnight Oats
In addition to sharing our weekly menu, each week I’ll feature a quick meal prep recipe. This week I’m sharing my take on Balsamic Vinaigrette, the first dressing I ever learned how to make – courtesy of my mom’s boyfriend & chef extraordinaire, Dave 🙂
Here’s What You’ll Need:
3/4 Cup EVOO
1/4 Cup Balsamic Vinegar
1 Heaping Spoonful of Organic Honey
1 Heaping Spoonful of Dijon Mustard
Optionals: Fresh herbs, Shallots, Salt & Pepper to taste.
Let’s Get Started:
1. Combine your EVOO & Balsamic Vinegar in a ball jar – totally NOT sponsored, just obsessed y’all!
2. Add in the honey & dijon.
3. Toss in any optionals.
4. Whisk to combine.
Notes: This will make about 1 cup and will last a few weeks in the fridge, if you manage to keep it that long!
