Farm Eats: March 19th – March 25th

Morning Y’all! 
The Farmer & I recently had a “come to Jesus” meeting about our monthly budget. Now, y’all know I LOVE LISTS & budgeting is definitely a part of that; however we’ve been – let’s just say, a little relaxed lately when it comes to spending. This month marks the 1st month we’re trying to reign things in, work towards increased savings & stick to the budgets we’ve set for various categories – including groceries (tear). The next two weeks are going to be “fun” as I’ve spent nearly all the budget for this month already (oops!) so you’ll continue to see budget friendly, easy-peasy farmhouse meals on our menu plan. Ain’t nothing wrong with that & I’m finding myself actually kind of excited about the challenge I’m facing next week; $60.00 for the entire week for both of us – which is well under what we typically spend for a week of food – I’ll keep y’all posted on how I do!
Anywho, let’s get down to business … (and defeat the huns, OK I HAD TO!) 😉
Here’s what I’m making this morning to make life a bit easier during the work week

Sunday 
  • Brekkie: Farm House Oatmeal – recipe coming soon! 
  • Lunch: Nibbles
  • Dinner: St. Pattie’s Day Usuals – Corned Beef & the Like
Monday
  • Brekkie: Chia Pudding 
  • Lunch: Turkey & Swiss Wrap
  • DinnerBlackened Salmon with Roasted Root Veggies & Asparagus
Tuesday
  • Brekkie: Overnight Oatmeal 
  • Lunch: Ham & Swiss Wrap
  • Dinner: Pulled Pork over Brown Rice & Black Beans 
Wednesday 
  • Brekkie: Chia Pudding 
  • Lunch: Turkey & Swiss Wrap  
  • Dinner: Curried Ground Turkey
Thursday 
  • Brekkie: Overnight Oatmeal
  • Lunch: Ham & Swiss Wrap  
  • Dinner: Skillet Gnocchi 
Friday 
  • Brekkie: Chia Pudding 
  • Lunch: Turkey & Swiss Wrap  
  • Dinner: Beef Noodle Stir Fry – recipe coming soon!
Saturday 
  • Brekkie: Egg Bake  
  • Lunch: Nibbles 
  • Dinner: TBD… if it’s yucky perhaps a roast; if it’s lovely (the weather!) perhaps something on the smoker!
