Farm Eats: April 9th – April 14th

Hey Y’all!
Woof, The Farmer & I had quite the busy weekend! When the temp hits 70 in Minnesota IN APRIL you have to get out & enjoy every moment of it, and that we did! Last week the hubs & I started our 3rd mini round of Whole30 & the work week was a piece of cake. We decided to indulge a bit over the weekend & lived life OFF Whole30 and have no regrets! Life, as we’ve said before, is all about finding the right balance. Saturday was spent running errands, enjoying a glorious lox bagel & having a few tiki drinks on a riverside patio. All in all, an absolutely gorgeous weekend. It’s Sunday morning now & we’re currently sitting in our kitchen nook, guzzling down coffee & enjoying the sunshine. We’re supposed to get hit pretty hard with some severe thunderstorms this afternoon & evening so doing what we can to enjoy it now 😉 
Anywho – 
Here’s what I’m making this morning to make life a bit easier during the work week –

Monday
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies 
  • Dinner: Blackened Salmon with Roasted Root Veggies & Broccoli 
Tuesday
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies 
  • Dinner: TBD… today we’re celebrating our wedding anniversary, perhaps I’ll make The Farmer take me out to some place special 😀
Wednesday 
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies   
  • Dinner: One Pan Sausage Bake #BudgetFriendly – sub Whole30 friendly chicken sausage
Thursday 
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies   
  • Dinner: Brekkie for Dinner 
Friday 
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies   
  • Dinner: Stir-Fry with Steak & Veggies 
As you’ll notice above, my weekday menu plan once again follows a Whole30 mindset. I’m finding that I like living life that way during the week & splurging a bit on the weekends. Not sure if we’ll continue this into the following week as my grocery budget is slowly creep creep creeping up & I’d love to stay on track for April, so we’ll see!
