Farm Eats: April 30th – May 5th

Hey Y’all! 
Well this is most definitely a first; writing my weekly menu post on an icky Monday as opposed to a meal prep Sunday! The Farmer & I spent the weekend out at the farm & took today off just for us to relax; it’s been since Christmas so lord knows we deserve it! It’s been super wet here in Minnesota so they didn’t get much done farm wise this weekend; but it was really nice to spend some time out there & enjoy the gorgeous surroundings which hopefully you saw if you follow us on Instagram! Due to the above & the fact we’ll more than likely be back out there this coming weekend & in the field, I’m focusing on a very light, verrrry budget friendly menu plan this week. Cleaning out the freezer a bit (gotta make room for some farm beef dontcha know!) & not stressing over meals since slamming 5 work days into 4 is always “fun” when you’re in corporate banking 😉 That’s the plan for this week!
Anywho – 
Here’s what I’m making this morning to make life a bit easier during the work week:
Now onto this week’s menu plan:
Sunday
  • Brekkie: Farmhouse Egg Bake 
  • Lunch: So fulllllllll 
  • Dinner: Nibbles; still so fullllll 
Monday
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies
  • Dinner: Blackened Salmon with Roasted Root Veggies & Broccoli   
Tuesday
  • Brekkie: Overnight Oats  
  • Lunch: Salad loaded with Veggies 
  • Dinner: Egg Bake lefties #BudgetFriendly 
Wednesday 
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies   
  • Dinner: Red Curry Chicken
Thursday 
  • Brekkie: Overnight Oats  
  • Lunch: Salad loaded with Veggies
  • Dinner: Butternut Squash Mac & Cheese #FreezerMeal #BudgetFriendly 
Friday 
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies   
  • Dinner:  TBD; heading back out to the farm #SpringWork #FarmLife 
There you have it, another week in the books! Keep an out out for some new recipes coming soon, including some from The Farmer!
