Hey Y’all!
Happy Meal Prep Sunday! I’m writing this, not from my normal kitchen nook but from the farm as I look out over the fields & sip on this gloriously GIANT coffee, can I get an amen?! We’ve had an absolute blast this weekend – okay well, I’ve had an absolute blast this weekend, The Farmer is exhausted – but happy to be out in the field with my FIL. In addition to resting up (Again… sorry Benjamin!) this weekend, I got ahead on my May menu planning & put the finishing touches on some great recipe posts hitting the blog real soon! You’ll notice this week’s menu looks a tad light, that’s due to the fact that The Farmer is traveling on business Monday through Wednesday this week… meaning girls nights & cheese & wine for me! Haha, no seriously though! While I do love to cook & meal plan, I absolutely love “snack meals” especially in the spring & summer months when it’s just too hot to cook – especially farmhouse fare.
Anywho –
Here’s what I’m making this evening to make life a bit easier during the work week:

There you have it, another week in the books! As we look towards spring & summer fare I’m going to be leaning on y’all for meal suggestions. While I absolutely adore being in the kitchen, I’ve always leaned towards heartier “farmhouse” fare & would love to hear from you with your spring & summer go to dinner options – especially those that don’t require me turning on the oven!
