Hello Minnesota Spring … 85° and sunny last weekend, 40° and thunderstorms this weekend – bleh! I will say after a busy week of farm work & business travel (for The Farmer) this is just the weekend we needed, low key & relaxing – I might even convince him to make me a fire tonight! Menu wise, things are back to normal this week with some summer additions – hello grilling season! The Farmer is super excited for Brats & Roasted Corn tonight – easily a weekly summer staple in our house. Speaking of summer staples… I need help y’all! I am the queen of fall & winter fare, I’m looking for some spring & summer meals that are low key & require little to no oven time – what’s your go to meal option?
