Farm Eats: May 28th – June 2nd

Hey Y’all! 
Happy Memorial Day weekend from The Farmer & I! We hope that where ever you are & how ever you’re celebrating you’re safe, happy & thankful for why we celebrate this day. The weather in Minnesota has been absolutely gorgeous this weekend & we’re so thankful – dare I say, summer is coming y’all – FINALLY! As I prep for another hot summer here (NO CENTRAL AIR Y’ALL!) you’ll see I’ve already started to switch my menu away from heavier, oven-based meals & towards stove-top & grilled-based meals. I recently asked for your recommendations for low to no oven-based spring & summer meals & got some amazing feedback! The grill was the stand out winner for sure, not only for meat but also for fish & veggies – definitely looking forward to trying some of your suggestions this summer!

Here’s what I’m making this morning to make life a bit easier during the work week:

Tuesday
  • Brekkie: Overnight Oats  
  • Lunch: Salad loaded with Veggies 
  • Dinner: Brats & Roasted Corn #Leftovers #BudgetFriendly 
Wednesday 
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies   
  • Dinner: Pulled Pork Tacos 
Thursday 
  • Brekkie: Overnight Oats  
  • Lunch: Salad loaded with Veggies
  • Dinner: Kung Pao Noodles – new recipe!
Friday
  • Brekkie: Chia Pudding 
  • Lunch: Salad loaded with Veggies   
  • Dinner:  TBD
There you have it, another week in the books! It’s hard to believe that this week we transition from May to June; officially marking our halfway point into 2017 – where does the time go?! Believe it or not, we’ve been in Minnesota for a full year & half now & it’s just flown by! We’re so blessed to be here, living in this amazing home in a great location, have jobs we genuinely enjoy (90% of the time hehe) & have the opportunity to work with my FIL on the farm that we hope to take over someday soon. This life is amazing y’all, be thankful & enjoy every moment!
