Happy Memorial Day weekend from The Farmer & I! We hope that where ever you are & how ever you’re celebrating you’re safe, happy & thankful for why we celebrate this day. The weather in Minnesota has been absolutely gorgeous this weekend & we’re so thankful – dare I say, summer is coming y’all – FINALLY! As I prep for another hot summer here (NO CENTRAL AIR Y’ALL!) you’ll see I’ve already started to switch my menu away from heavier, oven-based meals & towards stove-top & grilled-based meals. I recently asked for your recommendations for low to no oven-based spring & summer meals & got some amazing feedback! The grill was the stand out winner for sure, not only for meat but also for fish & veggies – definitely looking forward to trying some of your suggestions this summer!
