Whole30 • Round3 • Week2

Morning Y’all – Happy Sunday Funday! 
I thought I’d start this post with a little “week one round up” – 
  • What Surprised Me Most? I think the thing that surprised me most about week one is that I wasn’t starving; the 1st few days of switching over I’m usually craving ALL THE SNACKS & for some reason this round I haven’t been (yet!) so I was happy about that.
  • How Am I Feeling? For the majority of the week I felt good, energized, full & content. The second half of the week I got sick (bleh) so I’ve been taking it slow this weekend & am a bit worried about having enough energy to get though the mountain of meal prep I have planned for today (more on that later!) so wish me luck! 
  • Social Life: I didn’t have any social engagements this past week, so of course that makes life easier as well. 
  • My “Stay Strong” Moment of the Week: It’s gotta be Friday morning at work when my team lead, WHO IS SUPPOSED TO BE DOING WHOLE30 WITH ME (but is recovering from the flu…) brought in these decadent AF DONUTS from a local bakery. I may have kicked off the meeting by calling her a traitor 😉 
I like how that turned out, I think I’ll try to include that weekly as a tracker of sorts!
Anywho; in between tea & naps here’s my mountain of meal prep for today…
  • One dozen Hard Boiled Eggs 
  • Homemade Mayo
  • Two Second Paleo Vinaigrette – recipe coming soon!  
  • Mini Ground Turkey Paleo Meatballs 
  • Two (2) Grilled Chicken Breasts 
  • Two (2) Days worth of Grilled Chicken Salads 
  • Two (2) days worth of Chia Pudding
As for the remainder of the week; here’s what’s cooking on the farm… 
Sunday (Day 6) 
  • Brekkie: Egg Bake 
  • Lunch: Grilled Chicken Salad 
  • Dinner: Pot Roast – recipe coming soon! 
Monday (Day 7) 
  • Brekkie: Chia Pudding
  • Lunch: Grilled Chicken Salad 
  • Dinner: Blackened Salmon, Broccoli & Roasted Root Veggies 
Tuesday (Day 8) 
  • Brekkie: Chia Pudding
  • Lunch: Grilled Chicken Salad 
  • Dinner: One Pan Sausage Skillet 
Wednesday (Day 9) 
  • Brekkie: Chia Pudding
  • Lunch: Grilled Chicken Salad 
  • Dinner: Brekkie Hash (using Skillet leftovers!) 
Thursday (Day 10) 
  • Brekkie: Chia Pudding
  • Lunch: Grilled Chicken Salad 
  • Dinner: Beef Stew (using Pot Roast leftovers!) 
Friday (Day 11) 
  • Brekkie: Chia Pudding
  • Lunch: Grilled Chicken Salad 
  • Dinner: Fish (TBD!) Asparagus & Roasted Root Veggies 
Saturday (Day 12) 
  • Brekkie: Eggs, Bacon & Avocado 
  • Lunch: Grilled Chicken Salad 
  • Dinner: Coconut Lime Chicken – new recipe alert from A Saucy Kitchen
